Set your alarm early for this Cheesy Ajvar Omelette. Ajvar wakes up this classic savory dish with a little help from melty kashkaval and creamy feta cheese. This nourishing breakfast is the perfect start with protein (eggs), veggies (ajvar), calcium (cheese) and is grain-free.

What is ajvar?

• Ajvar is a red pepper spread popular in the Balkans. Sweet red peppers are roasted, finely minced, then slowly simmered for hours until they reach a creamy dip consistency. It’s a staple at breakfast but also served complimentary to grilled meat.

Can kashkaval be substituted?

• Kashkaval, sometimes labelled “Kaşar” or “Kachkaval,” is a melty semi-hard cheese made from cow or sheep milk. It can be found at Mediterranean and most Middle Eastern markets. Mozzarella, although milder than Kashkaval, is a great substitute. Any semi-hard meltable cheese will work beautifully in this dish such as Edam, Gouda, Gruyère, Swiss, and Provolone.

CHEESY AJVAR OMELETTE

Ingredients

1 tbsp butter

2 tbsp ajvar

2 eggs

1/8 tsp salt

2 tbsp shredded kashkaval cheese (or other melty cheese)

1 tbsp crumbled feta

Directions

  1. Whisk ajvar, eggs, and salt until combined.

  2. Warm a skillet to medium heat and melt butter.

  3. Evenly pour egg mixture to cover bottom of skillet. Do not move mixture around, cover and allow eggs to set for 2 -3 minutes.

  4. Uncover and add both cheeses to cover half of omelette. Gently fold over. Cover skillet again.

  5. Adjust to medium-low heat allowing cheese to melt (without over cooking eggs) about 1-2 minutes.

  6. Once cheese is melted, serve omelette warm.
