Baked Fish & Potatoes with Citrus Herb Dressing

What could make a one dish dinner even better? A fresh and bright Citrus Herb Dressing! It’s so fast you’ll be surprised how easy it is to take dinner to the next level.

Fish

Any type of flakey white fish fillet will work for this recipe. Cod, flounder, bass are some great alternatives. I chose fillets for this recipe because they don’t require prep and cook quickly which makes this weeknight friendly. The flexibility of this recipe is what makes it a superstar in the kitchen. Vegetables

The onion adds a layer of flavor but isn’t overpowering. It will soften and caramelize a bit while baking. Any type of potato will work here, even sweet potato! The key to keeping this a quick meal is thinly slicing the veggies to reduce oven time. I used a mandolin to get thin even slices but you could definitely flex your knife skills if you like.

Citrus

Lemon or lime both work great to add brightness in the dressing. If sweet & salty combos are your thing, try adding freshly squeezed orange juice to the mix.

Herbs

Parsley and dill bouquets are usually adorning my fridge shelves and they’re a classic pairing with fish. You can choose only one of them or try cilantro, it all depends on your preference.

BAKED FISH & POTATOES WITH CITRUS HERB DRESSING

Ingredients

2 large potatoes, thinly sliced

1 small onion, thinly sliced

1 tomato, chopped

1-2 tbsp olive oil

2 tilapia fillets

1/4 tsp sweet paprika

salt & pepper

Citrus Herb Dressing

1/3 c herbs (parsley and dill)

1 garlic clove

1/2 tsp salt

2 tbsp olive oil

1 tbsp fresh lemon juice

Zest of half a lemon

1 tbsp water

Directions

  1. Preheat oven to 425 degrees.

  2. In a greased oven dish, layer sliced onion, sliced potato and chopped tomato. Season lightly with salt and pepper.

  3. Drizzle 1-2 tbsp olive oil evenly over vegetables. Bake uncovered for 15 minutes or until potatoes are tender.

  4. In the meantime, prepare the dressing by combining all dressing ingredients in a food processor or blender. Pulse until there are no big pieces of garlic and herbs. Set aside until ready to serve.

  5. Using paper towel, pat fish fillets dry.

  6. Lay fish onto par-cooked vegetables. Lightly season with paprika, salt and pepper.

  7. Return to oven. Bake additional 10 minutes (depending on thickness of fish). Check for doneness.

  8. Generously drizzle Citrus-Herb dressing over fish and potatoes to serve.
