Blueberry Ice Cream
I scream, you scream, we all scream for ICE CREAM! Chocolate? Vanilla? Yeah, yeah, yeah… been there done that. Local Balkan flavors are what get me excited! Blueberry (aka borovnica, boronicë, borovnice, borovinka) flavored-everything is really popular throughout the Balkans. They’re picked at peak season and used for drinks, jams, ice cream, etc.
Hang on to the last bit of summer with this bright flavored and vibrant colored no-churn homemade ice cream. It comes together quickly with a hand mixer. A few all natural ingredients is all you need for a frozen treat packed with blueberry flavor. Ajde, let’s eat!
Blueberry Ice Cream
Ingredients
1 c Blueberries (fresh or frozen)
1/2 c Sugar
1/4 c Water
2 c Heavy Whipping Cream
1 can Sweetened Condensed Milk
Vanilla Extract
Zest of 1 Lemon
1/2 tsp Lemon Juice
Directions
•In a small saucepan stir together blueberries, sugar and water. Simmer uncovered for 10-15 minutes until blueberries release color into liquid. Blend mixture until smooth. For the ice cream’s flavor 3/4 c blueberry syrup is needed. The mixture can be returned to saucepan for additional few minutes to reduce to 3/4 cup if needed. Chill blueberry syrup thoroughly before going to the next step.
•Chill your bowl and whisk in the meantime. This helps the cream stay cold while whipping for the creamiest texture.
•In chilled bowl, combine whipping cream, condensed milk & vanilla. Whisk to stiff peaks.
•Gently fold in cold blueberry mixture, lemon zest & lemon juice until combined. Freeze at least 2 hours before serving.
