Yogurt Pancakes
Pancakes aren’t just for weekends… sometimes it’s a late night treat, an afterschool surprise, or maybe a special holiday tradition. These pancakes will quickly become a family favorite on repeat.
As a mom of four growing [read: hungry ALL the time] kids, I make a lot of pancakes. Like, A LOT! Making pancakes from scratch is easy and offers you freedom to control quality of ingredients (organic, pasture-raised, etc). The biggest plus is no additives or unpronounceable ingredients.
Most pancake recipes call for buttermilk, but who has that in their fridge anyway!? Tell me you’re Balkan, without telling me you’re Balkan: There is ALWAYS yogurt in the house!
If you’re not a fan of yogurt usually, rest assured, these pancakes don’t taste yogurt-y (is that even a word? It should be!). Two of my kiddos run away when they hear “yogurt” but they run TO the table for these pancakes.
Why yogurt?
• Plain yogurt works in this recipe because the acidity of yogurt reacts with raising agents (baking powder & baking soda) to create a fluffy tender pancake..
•Yogurt’s creamy texture thickens the batter for full body and easy pour.
•The slight tang of yogurt makes a perfectly balanced base for sweet toppings like maple syrup, honey, or fruit syrups.
YOGURT PANCAKES (10-12 )
Ingredients
1 c flour
1 tsp baking powder
1/8 tsp baking soda
1/2 tsp salt
1 c plain whole milk yogurt
2 eggs
2 tbsp melted (cooled) butter or neutral oil
2 tbsp sugar or maple syrup
1 tsp vanilla
Directions
Preheat griddle to medium-low heat
In a small bowl whisk together dry ingredients. Set aside.
In a medium bowl whisk together wet ingredients.
Add dry ingredients to wet and mix until just combined. Don’t fret over a few lumps. Over-mixing will toughen the batter.
Pour batter onto heated griddle 1/4 cup at a time. Make sure to leave 2 inches around each pancake so there is enough room to flip with spatula.
Flip after about 2 minutes. Edges will start to look slightly dry and bubbly. Cook an additional 2 minutes on other side and transfer to plate. Both sides should be golden.
